Apulian mozzarella (or fior di latte) is a stringy curd cheese, prepared with cow's milk. Mozzarella owes its name to the cutting operation performed to separate the individual pieces from the dough during the artisan processing. It is consumed mainly natural or accompanied by raw ham, other times with caprese (topped with a drizzle of extra virgin olive oil, tomatoes, oregano, basil) or used in salads. Mozzarella is also widely used on pizzas, calzones, rice balls and in many other traditional recipes, such as eggplant parmigiana, mozzarella in carrozza, baked lasagna.
